A delicious and creamy dish that combines wonderful flavors and a silky texture. This recipe is easy to prepare and will transport you to the taste of Italy. Preparation time: 30 minutes. Serves: 4.

Ingredients:

- 0.5 tsp black pepper
- 1 tsp salt
- 6 slices of skinless pancetta
- 85 g Arborio rice
- 50 g butter
- 3 shallots, finely chopped
- Peas, fresh or frozen (thaw before use)
- Dry white wine
- Vegetable broth (or chicken broth)

Instructions:

1. Pour vegetable broth into a large pot and bring it to a boil. Reduce to a simmer.
2. In another pot, melt half of the butter and add the finely chopped shallots. Sauté until soft.
3. Add the rice to the shallots and cook for a minute until the rice is slightly translucent.
4. Pour in the dry white wine and stir until the liquid has almost completely evaporated.
5. Gradually add the hot broth one ladle at a time, stirring continuously. Add more broth as the previous amount is absorbed.
6. Once the rice is al dente, stir in the peas, pancetta slices, and the remaining butter. Mix well.
7. Season with black pepper and salt. Serve topped with shavings of Parmesan cheese.
