A refreshing and delicious pea risotto that will delight your taste buds. This recipe is perfect for both everyday meals and special occasions. Preparation Time: Approximately 30 minutes
Serving Size: 4 servings
Ingredients:
- 8 cups vegetable broth
- 1 onion
- 2 cloves garlic
- 1 tablespoon butter or oil
- 3 cups risotto rice
- 2 cups white wine
- 200 g frozen peas
- 2 tablespoons lemon juice
- Black pepper to taste
- Salt to taste
- Fresh mint leaves (for garnish)
- Grated Parmesan cheese (for garnish)
Instructions:
1. Prepare the vegetable broth.
2. Peel and finely chop the onion and garlic.
3. Sauté the onion and garlic in a pot with butter or oil until softened.
4. Add the risotto rice and stir until the rice becomes translucent.
5. Pour in the white wine and let it absorb into the rice, stirring occasionally.
6. Gradually add the vegetable broth one ladle at a time, allowing the previous broth to be absorbed before adding more. Continue until the rice is tender but still al dente.
7. When about half of the broth has been used, add the frozen peas and gently fold them into the rice.
8. Season the risotto with lemon juice, grated Parmesan cheese, black pepper, and salt to taste.
9. Garnish with fresh mint leaves and additional grated Parmesan cheese before serving.
