Ingredients:
- 4 dl water
- 250 g dates, chopped
- 1 tsp baking soda
- 150 g butter, softened
- 130 g sugar
- 2 large eggs
- 4 dl all-purpose flour
- 1.5 tsp baking powder
- 1 tsp vanilla sugar
- 1/2 tsp ground cloves
- Margarine and breadcrumbs for greasing the pan
- Powdered sugar for decoration
Instructions:
1. In a saucepan, combine the water and chopped dates and boil until soft. Turn off the heat, add the baking soda, and let it sit to soften.
2. In a mixing bowl, cream the softened butter and sugars together. Add the eggs one at a time, beating well after each addition.
3. Mix in the all-purpose flour, baking powder, ground cloves, and vanilla sugar until smooth using a wooden spoon.
4. Incorporate the softened dates along with their cooking water into the batter and mix thoroughly.
5. Grease a cake pan with margarine and dust with breadcrumbs. Pour the batter into the prepared pan.
6. Bake in a preheated oven at 200°C (392°F) for about 40-45 minutes, or until the edges are firm and the center is slightly moist. Let it rest in the pan for a moment.
7. Invert the cake onto a serving plate while it’s still warm and dust with powdered sugar for decoration.
