Ingredients:
- 6 eggs
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 3.5 oz spinach
- 3.5 oz cheese (e.g., feta or mozzarella), crumbled
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
1. Preheat the oven to 350°F (180°C).
2. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, and sauté until softened, about 5-7 minutes.
3. Add spinach to the skillet and cook until wilted.
4. In a bowl, crack the eggs, add milk, salt, and pepper. Whisk to combine.
5. Pour the egg mixture over the vegetables in the skillet. Sprinkle crumbled cheese on top.
6. Cook the skillet on the stovetop for a few minutes until the edges begin to set.
7. Transfer the skillet to the oven and bake for about 10-15 minutes, until the frittata is fully set and the top is golden brown.
8. Allow to cool slightly before serving. Cut into slices and enjoy!
