A delicious rhubarb crumble pie that's perfect for surprise guests. It comes together quickly and tastes especially good with vanilla ice cream. Preparation Time: 30 minutes
Serving Size: 8 servings
Ingredients:
- 300 g rhubarb (fresh, sliced)
- 150 g sugar
- 1 tsp vanilla sugar
- 200 g all-purpose flour
- 100 g butter (melted)
- 1 tsp baking powder
- 1 egg
- 100 ml milk
Instructions:
1. Preheat the oven to 180°C (160°C for fan oven).
2. Lightly grease a pie dish.
3. In a bowl, mix the rhubarb slices with sugar and vanilla sugar. Spread the mixture evenly in the bottom of the pie dish.
4. In another bowl, combine the flour, baking powder, melted butter, egg, and milk to create a smooth batter.
5. Pour the batter over the rhubarb mixture and smooth the top.
6. Bake in the oven for about 25-30 minutes or until the top is beautifully golden brown.
7. Allow to cool slightly before serving. Serve with vanilla ice cream.
