A classic festive cake that improves with age. It's best to prepare this cake well in advance of Christmas to allow the flavors to develop.
Preparation Time: 1 hour + 24 hours resting time
Serving Size: 12 servings
Ingredients:
- 250 g butter
- 250 g sugar
- 4 eggs
- 250 g all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 100 g raisins
- 100 g dried apricots, chopped
- 100 g nuts, chopped
- 100 g candied orange peel
- 100 ml rum or other alcohol
Instructions:
1. In a bowl, cream the butter and sugar together until the mixture is light and fluffy.
2. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the flour, baking powder, cinnamon, and nutmeg. Gradually add the dry ingredients to the butter mixture.
4. Finally, fold in the raisins, chopped apricots, nuts, and candied orange peel until evenly combined.
5. Pour the batter into a greased cake pan.
6. Bake at 175°C (350°F) for about 45-50 minutes, or until the cake is golden brown and cooked through.
7. Allow the cake to cool at room temperature, then wrap it in plastic wrap. Store in a cool place for at least 24 hours before serving.
