Ingredients:

- 2-4 organic sweet potatoes
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 50 g walnuts
- 1 shallot
- Fresh cilantro
- A drizzle of oil (for the walnut salsa)

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Wash the sweet potatoes thoroughly with a brush and leave the skins on.
3. Make deep cuts into the sweet potatoes, leaving about an inch at the bottom intact.
4. Brush the surface of the sweet potatoes with olive oil and season with salt and pepper.
5. Bake the sweet potatoes in the oven for about an hour, until they are tender and crispy on the outside.
6. While the sweet potatoes are baking, toast the walnuts in a dry pan until they are slightly colored.
7. Chop the toasted walnuts and mix them with the finely chopped shallot and cilantro.
8. Add a drizzle of oil to the walnut salsa and mix well.
9. Serve the sweet potatoes with the walnut salsa on the side.
