A delightful and sweet main dish, perfect to enjoy on its own or alongside boiled Brussels sprouts.

Ingredients:
- 1 cup rice
- 4 cups vegetable broth
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1/2 cup raisins
- 1 tablespoon honey
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions:
1. Cook the rice in vegetable broth according to package instructions.
2. Heat olive oil in a skillet over medium heat.
3. Add the diced bell pepper and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables soften.
4. Stir in the cooked rice, raisins, honey, cinnamon, salt, and black pepper. Mix well.
5. Cook the mixture for a few more minutes until all ingredients are heated through and well combined.
6. Serve warm and garnish with fresh parsley.
