A delicious Finnish baked dish that combines vendace fish and rye bread, perfect for a weekend treat. Preparation Time: 2 hours
Serving Size: 6-8 servings
Ingredients:
- 500 g vendace fish (muikku)- 250 g rye flour
- 250 g wheat flour
- 1 dl water
- 1 dl milk
- 1 tsp salt
- 1 tsp baking powder
- 1 onion
- 2 tbsp butter
- Black pepper to taste
Instructions:
1. Start by preparing the vendace fish: clean and lightly salt the fish.2. Peel and finely chop the onion. Sauté the onion in butter in a pan until soft.
3. In a bowl, mix the rye and wheat flour, adding salt and baking powder.
4. Add the water and milk to the flour mixture and knead the dough until smooth.
5. Divide the dough into two pieces, making one piece larger than the other.
6. Roll out the larger piece of dough into a shape that fits your baking tray and place it on the tray.
7. Spread the sautéed onion over the dough and arrange the vendace on top. Season with black pepper.
8. Roll out the smaller piece of dough and cover the vendace with it. Pinch the edges tightly to seal.
9. Make a few slits on top of the dough to allow steam to escape during baking.
10. Bake in a preheated oven at 200°C (392°F) for about 40-50 minutes, until the kukko is beautifully golden brown.
11. Allow to cool slightly before serving.
