A traditional Finnish fish pie made with vendace, rye flour, and fresh herbs. Perfect for a hearty meal.
Preparation Time: 1 hour
Serving Size: 6 servings
Ingredients:
- 500 g vendace
- 4 dl rye flour
- 2 dl water
- 1 dl milk
- 1 tsp salt
- 1 tsp baking powder
- 1 onion
- 1 tbsp butter
- 1 tbsp dill (fresh or dried)
Instructions:
1. In a bowl, mix rye flour, salt, baking powder, water, and milk until a smooth dough forms.
2. Peel and finely chop the onion. Sauté the onion in butter in a skillet until soft.
3. Rinse the vendace and remove any innards. Combine the fish, sautéed onion, and dill in a bowl.
4. Divide the dough into two parts. Roll out one part and press it into the bottom of a baking dish.
5. Spread the vendace mixture evenly over the dough.
6. Roll out the second piece of dough and place it on top of the fish mixture.
7. Bake at 200°C (392°F) for about 40-50 minutes, until the top is golden brown.
8. Allow to cool slightly before serving.
