A delicious and hearty quesadilla filled with fava beans, spices, and cheese. Perfect for a quick meal or snack.

Serving Size: 4 servings
Ingredients:
- 1 tablespoon oil
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1/2-1 teaspoon smoked paprika (mild or hot)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 2.5 dl fava bean flour
- 4 dl hot water
- 1/2 teaspoon salt (to taste)
- 8 wheat tortillas or 12 corn tortillas
- 1/2 bunch cilantro (chopped)
- 200 g favorite cheese (shredded)
Instructions:
1. Heat the oil in a pan over medium heat.
2. Add cumin, coriander, and smoked paprika, and sauté the spices for one minute.
3. Add the chopped onion and minced garlic to the pan, and sauté until the onions are soft.
4. Stir in the fava bean flour and hot water. Let it simmer on low heat until the mixture thickens. Season with salt.
5. If using corn tortillas, preheat them in a stack on the pan.
6. Take a tortilla and place it on a dry pan. Sprinkle shredded cheese, spread the fava bean mixture, and add chopped cilantro. Top with more cheese and cover with another tortilla.
7. Cook the quesadilla on both sides until it is hot and has some dark spots.
8. Cut the finished quesadillas into four pieces and serve with guacamole, red salsa, or sour cream.
