A delightful fusion of Japanese and Chinese dumplings filled with savory ground pork and vegetables. Perfect as an appetizer or main dish.
Preparation Time: 1 hour
Serving Size: About 45-50 dumplings

Ingredients:

- 1 package Chinese dumpling wrappers (frozen, about 45-50 pieces)
- 400 g ground pork
- 1 onion, finely chopped
- 2 tsp grated ginger
- 2 garlic cloves, minced
- 1 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1 tbsp soy sauce
- 1 tbsp rice wine or dry sherry
- 1 bok choy, finely chopped (or 2 dl napa cabbage)

Instructions:

1. In a bowl, mix together the filling ingredients: ground pork, chopped onion, grated ginger, minced garlic, sesame oil, salt, white pepper, soy sauce, and rice wine.
2. Spread the dumpling wrappers on a clean surface in two or three batches, dusting with a little flour to prevent sticking.
3. Place a generous teaspoon of filling on each wrapper.
4. Dampen your finger with water and moisten the edge of the wrapper. Pinch or pleat the dumpling tightly to seal.
5. Boil the dumplings in a large pot of water in batches. They are done when they float to the surface. Remove with a slotted spoon and drain.
6. For extra flavor, pan-fry the dumplings in a bit of cooking oil until they are golden brown before serving.
7. Prepare a dipping sauce by mixing soy sauce, lime juice, and sesame oil. Add chili to the dip if desired.
