Gubbröra (Swedish Herring Caviar)

A delicious Swedish herring caviar combining matjes herring, anchovies, hard-boiled eggs, and spices. This creamy and flavorful mixture is perfect as an appetizer or side dish, especially during festive occasions. Preparation Time: 30 minutes + chilling time
Serving Size: 4-6 people
Ingredients:
- 120 g matjes herring fillets - 50 g anchovies
- 1 red onion
- 4 hard-boiled eggs
- 2-3 tablespoons Kalle's caviar paste or fish roe
- 1 bunch dill
- 1 bunch chives
- 1 dl mayonnaise
- ½ dl sour cream or crème fraîche
- Salt
- (Lemon juice)
- White pepper
Instructions:
1. Prepare the mayonnaise according to your preferred recipe. 2. Finely chop the red onion and place it in a bowl with a teaspoon of vinegar. Let it marinate for about 15 minutes, then drain the vinegar.
3. Boil the eggs hard for about 10 minutes. Cool them in cold water and peel them.
4. Mash the eggs with a fork and dice the herring fillets and anchovies into small cubes.
5. In a bowl, combine the eggs, herring, anchovies, chopped onion, dill, and chives.
6. Add the mayonnaise, fish roe, and sour cream or crème fraîche. Mix gently.
7. Season with salt, lemon juice, and white pepper to taste.
8. Allow the gubbröra to chill in the refrigerator for at least half an hour before serving.
9. Serve with crispbread, Scandinavian rye bread, or boiled new potatoes. Garnish with dill, chives, and fish roe if desired.
