Ingredients:
- 2 apples (e.g., Granny Smith) - 1 tablespoon lemon juice
- 1 tablespoon apple juice concentrate
- 1 tablespoon honey
- A pinch of vanilla extract
- ½ teaspoon cinnamon
- 2 eggs
- 1 cup coconut sugar
- ½ cup erythritol (or 1 cup cane sugar)
- ¾ cup olive oil
- 2 cups shredded coconut
- 2 cups almond flour
- 2.5 tablespoons tapioca flour
- 2 tablespoons potato starch
- 1 teaspoon baking powder
- ½ teaspoon xanthan gum
Instructions:
1. Peel the apples and cut them into small cubes. Place the apple cubes in a bowl, and add lemon juice, vanilla extract, cinnamon, apple juice concentrate, and honey. 2. Whisk the eggs with coconut sugar and erythritol until fluffy.
3. Add the apple mixture to the egg mixture and mix well. Add the oil and stir again.
4. Gradually add the flours and mix until you have a smooth batter.
5. Preheat the oven to 180°C (350°F).
6. Pour the batter into muffin molds and bake for about 25-30 minutes, until the muffins are cooked through.
7. Allow the muffins to cool completely before serving. Store in the refrigerator and take out 10 minutes before serving.
