Soft Peach Quark Pie

A delightful and creamy dessert featuring peaches and a light quark filling. Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serving Size: 8 servings
Ingredients:
- 3 dl gluten-free flour (teff, rice flour, and light flour blend)
- 1/2 tbsp baking powder
- 2 dl sugar
- 2 dl quark (or yogurt buttermilk)
- 1/2 dl oil
- 2 cans vanilla cream
- 1 can diced peaches
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, mix the gluten-free flour, baking powder, and sugar.
3. Add the quark and oil, and mix until smooth to form a dough.
4. Press the dough into the bottom of a pie dish.
5. Spread the vanilla cream evenly over the crust.
6. Arrange the diced peaches on top of the vanilla cream.
7. Bake in the oven for about 35 minutes, or until the top is beautifully golden brown.
8. Allow to cool before serving.
