Ingredients:
- 4 eggs - 1 ripe avocado
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh cilantro (optional)
- 1/2 teaspoon paprika (optional)
Instructions:
1. Boil the eggs in a pot of boiling water for about 10 minutes. Cool and peel the eggs.2. Slice the eggs in half lengthwise and scoop the yolks into a bowl.
3. Add the avocado, lemon juice, salt, and black pepper to the yolks. Mix until smooth.
4. Fill the egg whites with the avocado mixture.
5. Sprinkle cilantro and paprika on top if desired.
6. Serve immediately or refrigerate before serving.
