Ingredients:
- 400 g white beans (e.g., cannellini)
- 200 g chorizo sausage
- 1 large onion
- 2 garlic cloves
- 1 red bell pepper
- 2 carrots
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 liter vegetable or meat broth
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Soak the white beans in water for at least 4 hours or overnight.
2. Peel and finely chop the onion and garlic. Peel and slice the carrots, and chop the bell pepper.
3. Heat the olive oil in a large pot over medium heat. Add the onion and garlic; sauté until softened.
4. Add the chorizo sausage and cook until slightly browned.
5. Stir in the bell pepper, carrots, and paprika; mix well.
6. Add the soaked beans and the vegetable or meat broth. Bring to a boil, then reduce the heat. Let simmer for about 40 minutes or until the beans are tender.
7. Season with salt and black pepper. Serve warm, garnished with fresh parsley.
