A delicious and nutritious recipe for stuffed bell peppers, perfect for enjoying during pregnancy. Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 4 large bell peppers (preferably in different colors)
- 300 g ground meat (beef or chicken)
- 1 dl pre-cooked rice
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 can (400 g) crushed tomatoes
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl shredded cheese (e.g. mozzarella or cheddar)
- Fresh parsley for garnish
Instructions:
1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
2. Cut the bell peppers in half lengthwise and remove the seeds. Place them in a baking dish.
3. Heat a little oil in a pan and add the onion and garlic. Sauté until the onions are soft.
4. Add the ground meat to the pan and cook until browned. Season with salt, pepper, and oregano.
5. Stir in the pre-cooked rice and crushed tomatoes. Let simmer for about 5 minutes.
6. Fill the bell peppers with the meat mixture and sprinkle cheese on top.
7. Bake in the oven for about 25-30 minutes, until the peppers are tender and the cheese is melted and bubbly.
8. Garnish with fresh parsley before serving.
