A delicious and beautiful side dish made from sweet potatoes, perfect for festive tables or everyday indulgence. Preparation Time: 45 minutes
Serving Size: 4-6 people
Ingredients:
- 900 g sweet potatoes - 2 egg yolks
- 2 tablespoons butter
- 1/2 teaspoon salt
- Cayenne pepper to taste
Instructions:
1. Peel and cut the sweet potatoes into chunks and place them in a pot. 2. Add enough water to cover the sweet potatoes.
3. Bring to a boil and cook until the sweet potatoes are tender.
4. Drain the water and mash the sweet potatoes using an immersion blender.
5. Stir in the egg yolks and butter into the mashed sweet potatoes.
6. Season the mixture with salt and cayenne pepper.
7. Pipe the sweet potato mixture into small rosettes on a baking sheet lined with parchment paper.
8. Bake in the oven at 225°C (437°F) for 25-30 minutes, until the rosettes are golden and easily lift off the parchment paper.
