Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, sliced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 200 g green beans, chopped
- 400 g crushed tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Add chopped onion and crushed garlic, sauté for about 3-4 minutes until soft.
3. Add the sliced carrots and cook for an additional 5 minutes.
4. Stir in the zucchini, bell pepper, and green beans, mixing well and cooking for another 5 minutes.
5. Pour the crushed tomatoes into the skillet and add thyme, oregano, salt, and pepper.
6. Allow the stew to simmer on low heat for about 20 minutes until the vegetables are tender.
7. Serve warm, garnished with fresh parsley.
