A delicious chickpea loaf that's a great alternative for festive gatherings or any special occasion. Easy to prepare and full of flavor, it can be enjoyed year-round.Preparation Time: 1 hour 15 minutes
Serving Size: 6-8 servings
Ingredients:
- 1 liter cooked chickpeas - 200 ml orange juice
- 100 ml fresh chopped parsley
- 75 g breadcrumbs or oats
- 2-4 garlic cloves
- 1 onion
- Cold-pressed coconut oil for frying
- 1 tsp sea salt
- 1 tsp ground ginger
- 2 tsp ground coriander
- 2 tsp black pepper
- Juice of 1 organic lemon, to taste
- 2 tbsp organic soy sauce
- 3 tbsp tomato paste
- Oil for frying
- Breadcrumbs for dusting the baking dish
- Orange juice for moistening
Instructions:
1. If using dried chickpeas, soak them overnight. Cook the chickpeas in clean water seasoned with sea salt for about 45 minutes to 1 hour until tender.2. Blend the cooked chickpeas in a food processor with the orange juice. Gradually add juice until the mixture is smooth.
3. Mix the breadcrumbs and all the spices into the blended chickpeas.
4. Chop the onion and sauté it in oil until soft. Stir the sautéed onion into the mixture.
5. Transfer the mixture to a greased and breadcrumb-dusted baking dish of at least 2 liters capacity.
6. Bake the loaf at 175°C (350°F) for about 45 minutes.
7. Moisten the loaf with orange juice if needed before serving.
