A delightful vanilla berry pie, perfect for indulging on summer days. You can use any berries you have in your kitchen. Preparation Time: 1 hour
Serving Size: 8–10 pieces
Ingredients:
- 150 g butter - 1 dl sugar
- 2 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 2 eggs
- 2 dl berries (e.g., blueberries, raspberries, strawberries)
Instructions:
1. Cream the softened butter and sugar until light and fluffy. 2. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the all-purpose flour, potato flour, baking powder, and vanilla sugar.
4. Gradually add the flour mixture to the butter mixture, stirring until a smooth batter forms.
5. Pour the batter into a greased pie dish.
6. Scatter the berries over the top of the batter as desired.
7. Bake in a preheated oven at 175°C (350°F) for about 30–40 minutes, or until the pie is golden brown.
8. Allow to cool before serving.
