A delicious, hearty, and colorful winter warmer that not only warms the body but also the soul.
Preparation Time: 1 hour
Serving Size: 4-6 servings

Ingredients:

- 400 g moose meat
- 2 beets
- 3 potatoes
- 2 carrots
- 1 onion
- 1 garlic clove
- 1.5 l beef broth
- 2 tbsp tomato paste
- 2 tbsp oil
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill for garnish
- 2 dl heavy cream
- 2 tbsp grated horseradish

Instructions:

1. Peel and chop the beets, potatoes, carrots, and onion.
2. Cut the moose meat into small cubes.
3. Heat the oil in a large pot and lightly brown the moose meat.
4. Add the onion and garlic, sautéing until they are soft.
5. Add the beets, potatoes, and carrots, mixing well.
6. Pour the beef broth into the pot and add the tomato paste and bay leaf.
7. Allow the soup to simmer on low heat for about 30-40 minutes, until the vegetables are tender.
8. Season with salt and pepper to taste.
9. Mix the heavy cream and horseradish together and serve it on top of the soup.
10. Garnish with fresh dill before serving.
