This spiced and rich fruit cake is wonderfully moist and flavorful. It’s a perfect treat to enjoy on its own or with butter. Preparation Time: 2 hours
Serving Size: 12 slices
Ingredients:
- 170 g butter or margarine - 340 g mixed dried fruits, chopped (e.g., raisins, apricots)
- 60 g candied cherries, halved
- 350 g brown sugar
- 300 ml milk
- 550 g all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/4 tsp cayenne pepper
- 2 eggs
Instructions:
1. Melt the butter and brown sugar in a saucepan. Add the dried fruits and candied cherries. Heat the mixture for one minute. 2. Remove the saucepan from heat and let it cool slightly.
3. In a bowl, mix the flour, baking soda, and spices. Add the dry ingredients to the melted mixture.
4. Incorporate the eggs and stir the batter until smooth.
5. Grease a baking pan with butter or margarine.
6. Pour the batter into the pan and bake in a preheated oven at 140°C (284°F) for about 1.5 hours. Test with a toothpick to ensure it’s not sticky.
7. Allow the cake to cool in the pan for about 15 minutes before transferring it to a serving platter.
8. Slice and enjoy with your favorite accompaniments, such as butter or cheese.
