Ingredients:

- 400 g fresh salmon fillet
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon (juice and zest)
- 200 g green beans
- 200 g potatoes
- 100 ml white wine
- 1/2 dl fresh parsley, chopped
- 4 glasses of sparkling wine (e.g., Champagne)

Instructions:

1. Preheat the oven to 200°C (390°F).
2. Season the salmon fillet with salt, black pepper, and lemon juice. Add the lemon zest on top.
3. Heat the olive oil in a frying pan and sear the salmon for a few minutes on each side until golden brown.
4. Transfer the salmon to the oven and bake for about 10 minutes until the fish is cooked through.
5. Boil the green beans and potatoes in salted water until tender but still crisp. Drain and transfer to a serving dish.
6. Pour the white wine into the pan where you cooked the salmon and let it simmer for a few minutes. Pour the sauce over the vegetables.
7. Garnish the dish with chopped parsley and serve with sparkling wine.
