This delicious banana granola is the perfect breakfast choice, providing an energizing start to your day. The roasted granola is packed with nuts and seeds and especially tastes great with yogurt and berries. Preparation Time: 40 minutes
Serving Size: 8 servings
Ingredients:
- 250 g gluten-free rolled oats
- 80 g hazelnuts
- 40 g pistachios
- 60 g pumpkin seeds
- 2 ripe bananas
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 tbsp coconut oil
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, combine the rolled oats, hazelnuts, pistachios, and pumpkin seeds. Mix well.
3. In another bowl, mash the bananas and add honey, cinnamon, and salt. Mix until smooth.
4. Add the banana mixture to the dry ingredients and stir until everything is well combined.
5. Melt the coconut oil and pour it over the mixture. Stir again to combine.
6. Spread the granola mixture evenly on a baking sheet lined with parchment paper.
7. Roast in the oven for about 25-30 minutes, until the granola is golden brown, stirring halfway through.
8. Allow the granola to cool before storing it in an airtight container.
