A delicious and flavorful side dish that elevates traditional beets to a new level. This dish pairs wonderfully with goat cheese as an appetizer or can be added to salads. Preparation Time: 45 minutes

Ingredients:
- 600 g beets
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp honey
- Salt to taste
- Black pepper to taste
- Fresh herbs (such as thyme or rosemary)
Instructions:
1. Peel the beets and cut them into your desired size.
2. Boil the beet pieces in salted water for about 15 minutes, until they are slightly tender but not fully cooked.
3. Drain the beets and transfer them to a baking dish.
4. In a bowl, mix balsamic vinegar, olive oil, honey, salt, and black pepper.
5. Pour the balsamic mixture over the beets and toss to coat well.
6. Sprinkle fresh herbs over the beets.
7. Roast the beets in a preheated oven at 200°C (400°F) for about 20-25 minutes, until they are beautifully golden brown and cooked through.
8. Serve warm or at room temperature.
