Ingredients:
- 150 g fresh salad mix - 1 avocado
- 1 mango
- 1 cucumber
- 1 dl cherry tomatoes
- 1/2 dl feta cheese (or vegan alternative)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh herbs (e.g., cilantro or mint) for garnish
Instructions:
1. Rinse the salad mix and dry it thoroughly. 2. Peel and dice the avocado and mango into cubes.
3. Slice the cucumber and halve the cherry tomatoes.
4. Combine all ingredients in a large bowl.
5. Prepare the dressing by mixing the olive oil, lemon juice, salt, and pepper.
6. Pour the dressing over the salad and toss gently.
7. Garnish with fresh herbs before serving.
