Tartiflette

A warm and comforting French dish made with potatoes, cheese, and bacon. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 1 kg potatoes
- 2 onions
- 200 g smoked bacon or diced pancetta
- 2 cans of crème fraîche
- 500 g Reblochon cheese (or 250 g raclette cheese and 250 g brie)
- Salt to taste
- Black pepper to taste
- Butter for greasing the baking dish
Instructions:
1. Boil the potatoes with their skins until just tender.
2. Chop the onions and sauté them with the bacon in a pan until golden.
3. Stir in the crème fraîche, seasoning with salt and black pepper.
4. Slice the cooked potatoes into rounds.
5. Grease a baking dish with butter.
6. Layer half of the potato slices at the bottom of the dish.
7. Spread half of the bacon-onion mixture over the potatoes, then repeat the layers with the remaining potatoes and bacon mixture.
8. If desired, place half of the cheese between the layers.
9. Finally, arrange the remaining cheese on top of the layers.
10. Bake in the oven for about 1 hour until the cheese is golden. You can turn on the grill for a few minutes at the end for extra browning.
11. Serve with a green salad and enjoy!
