A delicious yogurt cake that’s a great way to use leftover plain yogurt. It's moist and gets better overnight, making it perfect for a weekend breakfast with black coffee.

Serving Size: 8-10 pieces
Ingredients:
- 1 2/3 cups plain yogurt
- 1/2 cup canola oil
- (1 egg, optional)
- Zest of 1 orange
- 3 1/3 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder or baking soda
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix the yogurt and canola oil. If using, add the egg to this mixture.
3. Grate the zest of a well-washed orange and add it to the mixture.
4. In another bowl, combine the flour, sugar, and baking powder.
5. Pour the dry ingredients into the yogurt mixture and stir well until all ingredients are combined.
6. Pour the batter into a greased baking pan and bake in the oven for about 40 minutes, or until the cake is golden brown and baked through.
7. Allow the cake to cool before serving. It’s best after resting in the refrigerator overnight.
