A rich and sweet Toblerone cheesecake, perfect as a Mother's Day gift. This easy-to-make cake sets in the fridge without gelatin, making it especially creamy and delicious.
Preparation Time: 30 min + chilling (at least 4 hours)
Serving Size: 10-12 servings

Ingredients:

- 200 g Domino cookies
- 100 g butter
- 300 g mascarpone cheese
- 200 g white Toblerone chocolate
- 1 dl sugar
- 2 dl heavy cream

Instructions:

1. Crush the Domino cookies into fine crumbs and mix them with melted butter. Press the mixture firmly into the bottom of a springform pan.
2. Melt the white Toblerone chocolate in a double boiler or microwave. Allow it to cool slightly.
3. In a bowl, beat the mascarpone cheese and sugar together until smooth.
4. Add the melted Toblerone chocolate to the mascarpone mixture and mix well.
5. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the chocolate-mascarpone mixture.
6. Pour the filling over the crust and smooth the top. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight.
7. Optionally, decorate with white chocolate before serving.
