Ingredients:
- 400 g chicken breast - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 100 g feta cheese, crumbled
- Fresh basil for garnish
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Add chopped onion and crushed garlic. Sauté until soft.
3. Add chicken breasts and cook until golden brown and cooked through.
4. Stir in diced bell pepper and zucchini; cook for a few minutes until slightly softened.
5. Add cherry tomatoes and oregano, mixing well. Season with salt and pepper.
6. Allow to cook for an additional 5 minutes until all ingredients are heated through and flavors meld.
7. Remove from heat and fold in crumbled feta cheese.
8. Garnish with fresh basil before serving.
