A delightful treat traditionally enjoyed during Midsummer celebrations in Finland.

Serving Size: 12 doughnuts

Ingredients

- 500 g all-purpose flour
- 2 dl milk
- 25 g fresh yeast
- 100 g sugar
- 2 eggs
- 1 tsp salt
- 1 tsp cardamom
- 100 g butter
- 1 liter oil (for frying)
- Powdered sugar for decoration

Instructions

1. Dissolve the yeast in warm milk and add the sugar. Let it sit for 10 minutes.
2. In a bowl, mix the flour, salt, and cardamom. Add the yeast mixture and eggs to the dry ingredients.
3. Knead the dough for about 10 minutes until smooth. Add the softened butter and knead again.
4. Cover the dough with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Roll out the dough to about 1 cm thick and cut out round doughnuts.
6. Let the doughnuts rise for another 30 minutes.
7. Heat the oil in a pot to 180°C (350°F) and fry the doughnuts until golden brown.
8. Remove the doughnuts and let them drain on paper towels, then sprinkle with powdered sugar before serving.
