Ingredients:

- 2 carrots
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 3 garlic cloves
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme or rosemary

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Peel and chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces.
3. Mince the garlic cloves.
4. In a large bowl, toss all the vegetables with olive oil, salt, pepper, and herbs.
5. Spread the vegetables evenly on a baking sheet.
6. Roast in the oven for about 25-30 minutes, until the vegetables are tender and have a nice color.
7. Serve warm alongside grilled meat or fish.
