Ingredients:
- 400 g black beans (or chickpeas or other beans) - 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 avocado, sliced
- 200 g cherry tomatoes, halved
- 1 dl fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
- Tortilla wraps for serving
Instructions:
1. Rinse the black beans and place them in a large bowl. 2. Add the red onion, garlic, red bell pepper, avocado, and cherry tomatoes to the beans.
3. Stir in the chopped cilantro, lime juice, and olive oil.
4. Season with salt and pepper. Gently mix all the ingredients together.
5. Serve the mixture wrapped in tortilla or as a side dish.
