A delicious tart that combines the freshness of vanilla and lingonberries, perfect for celebrations or everyday treats.
Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 2 dl whipped vanilla cream
- 200 g plain cream cheese
- 3 tbsp cocoa powder
- 1 dl sugar
- 4 eggs
- 2 tbsp potato flour
- ½ dl all-purpose flour
- 2 dl lingonberries
- 1 tbsp vanilla sugar
- 1 tsp baking powder
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a tart pan.
2. Whisk the eggs and sugar together until the mixture is fluffy and pale.
3. Combine the dry ingredients (cocoa powder, potato flour, all-purpose flour, baking powder, and vanilla sugar) and sift them gently into the egg mixture. Mix lightly.
4. Add the cream cheese and whipped vanilla cream to the batter and mix well.
5. Carefully fold in the lingonberries to avoid breaking them too much.
6. Pour the batter into the prepared pan and smooth the surface.
7. Bake in the oven for about 30-35 minutes, until the tart is cooked and has a lovely color on top.
8. Allow to cool before serving.
