Ingredients:
- 3 dl finely grated carrots- 2 dl sugar
- 1 dl canola oil
- 3 eggs
- 3 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 0.5 tsp salt
- 1 dl nuts or raisins (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.2. In a large bowl, mix sugar, oil, and eggs. Whisk until the mixture is fluffy.
3. Add the grated carrots and mix well.
4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Mix the dry ingredients together.
5. Add the dry ingredients to the wet mixture and stir until smooth. If using, add nuts or raisins.
6. Pour the batter into the prepared pan and bake in the oven for about 40-50 minutes or until the cake is cooked through (test with a toothpick).
7. Allow the cake to cool before serving.
