A delicious savory dish made with leftover mashed potatoes and a mix of vegetables. Perfect as a side or a main! Preparation Time: 40 minutes
Serving Size: 10 servings
Ingredients:
- 400 g mashed potatoes - 100 g diced bacon
- 1 onion, finely diced
- 150 g red cabbage coleslaw
- 100 g cooked broccoli
- 5 fresh Brussels sprouts, shredded
- Salt and pepper to taste
- 50 g grated cheddar cheese
- A little melted butter
- 3 tablespoons all-purpose flour
Instructions:
1. Preheat the oven to 200°C (400°F) and grease a muffin tin with butter.2. Place the diced bacon in a cold frying pan and turn on the heat. Cook the bacon until the fat begins to render.
3. Add the diced onion to the pan and sauté in the bacon fat until softened.
4. Stir in the red cabbage and cook until the cabbage starts to soften.
5. In a large bowl, combine the mashed potatoes, bacon-onion-cabbage mixture, broccoli, and Brussels sprouts. Season with salt and pepper.
6. Add the grated cheese to the mixture and stir well to combine.
7. Divide the mixture into about ten portions, shape them into small cakes, and press into the muffin tin.
8. Brush the tops of the cakes with melted butter.
9. Bake in the oven for about 25 minutes, until the tops are golden brown.
10. Serve warm and enjoy!
