Ingredients:
- 200 g pasta (e.g., spaghetti or penne) - 2 tbsp olive oil
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 150 g cherry tomatoes, halved
- 100 g spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water. 2. Heat olive oil in a skillet over medium heat. Add the crushed garlic and sauté for about one minute.
3. Add the diced bell pepper and cook for 3-4 minutes until softened.
4. Add the halved cherry tomatoes and cook for another few minutes until they start to soften.
5. Add the spinach to the skillet and stir until it wilts.
6. Combine the cooked pasta with the vegetables in the skillet. Add a little reserved pasta water if needed to keep the pasta moist.
7. Season with salt and pepper. Mix well.
8. Serve the pasta in bowls, topped with grated Parmesan cheese and fresh basil.
