A delicious pasta dish perfect for utilizing the autumn chanterelle mushroom harvest. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., tagliatelle or spaghetti) - 400 g chanterelle mushrooms
- 2 garlic cloves
- 1 small onion
- 2 tbsp olive oil
- 100 ml cream
- 50 g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and save a little pasta water. 2. Peel and chop the onion and garlic. Sauté them in olive oil in a pan over medium heat until soft.
3. Add the chanterelle mushrooms to the pan and cook for about 5-7 minutes until the mushrooms are cooked and the moisture has evaporated.
4. Pour the cream into the pan and mix well. Let it simmer on low heat for a few minutes.
5. Add the cooked pasta to the pan and mix. If necessary, add a little reserved pasta water to keep the mixture moist.
6. Season with salt and pepper, and stir in the grated Parmesan cheese. Mix well.
7. Serve the portions garnished with fresh parsley.
