A creamy and savory pasta dish featuring delicious yellow chanterelle mushrooms, perfect for a cozy dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 15 handfuls of tagliatelle pasta
- 50 g butter
- 1 onion
- 1 garlic clove
- 3 handfuls of chanterelle mushrooms
- ½ small bell pepper
- 8 sun-dried tomatoes (in oil)
- 1 dl sour cream
- Salt and pepper to taste
- A few drops of truffle oil
- Fresh thyme
- Fresh parsley
- Parmesan cheese for serving
Instructions:
1. Cook the pasta according to package instructions in salted water, then drain.
2. Sauté the chanterelle mushrooms in butter until the excess moisture evaporates. Season with salt and pepper, then remove from the pan.
3. In the same pan, sauté the onion and garlic in butter until softened.
4. Dice the bell pepper and add it to the onion mixture. Halve the sun-dried tomatoes and add them to the pan. Sauté for a moment.
5. Stir in the sour cream, a bit of pasta cooking water, and a drizzle of the sun-dried tomato oil. Season with salt and pepper.
6. Add the cooked pasta, truffle oil, thyme, and plenty of parsley to the pan. Toss everything together well.
7. Serve with grated Parmesan cheese on top.
