Delicious Karelian finger foods made with thinly rolled dough and filled with rice porridge. A traditional Finnish treat perfect for snacking. Preparation Time: 1 hour
Serving Size: 12-15 sultsinas
Ingredients:
- 2 dl water- 1 tsp salt
- approx. 4.5 dl rye flour
- approx. 0.5 dl wheat flour
- 2 dl porridge rice
- 1 l whole milk
- approx. 50 g butter
Instructions:
1. Cook the porridge rice according to package instructions and simmer on low heat.2. Mix salt and flours into cold water and knead into a firm dough.
3. Shape the dough into a log on a floured surface and cut into small pieces. Cover with plastic wrap or a freezer bag to prevent drying.
4. Roll each piece of dough into a very thin circle (about 10-15 cm). Place on plastic wrap and sprinkle a little rye flour to prevent sticking.
5. Heat a frying pan very hot. Quickly fry the circles for about a minute on each side. Brush one side with a butter-milk mixture and place the buttered sides together.
6. Let the sultsinas rest in foil for a while.
7. Fill the sultsinas lightly with rice porridge, fold them in half lengthwise, and shape into a bundle.
8. Place the sultsinas in the oven (100°C) with butter pieces on top and let them sit until the butter has melted on the surface.
9. Serve with cold milk.
