A delicious and nutritious wrap made with coconut flour, fresh spinach, and eggs, perfect for lunch or a snack. Preparation Time: 30 minutes
Serving Size: 4 wraps
Ingredients:
- 2 dl coconut flour
- 4 eggs
- 1 dl milk (or plant-based alternative)
- 2 dl fresh spinach (chopped)
- 1 tsp salt
- 1/2 tsp baking powder
- Oil for frying
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, mix the coconut flour, salt, and baking powder.
3. Add the eggs and milk to the mixture and stir until you have a smooth batter.
4. Fold in the chopped spinach and mix well.
5. Spread the batter evenly on a baking tray lined with parchment paper.
6. Bake in the oven for about 15-20 minutes, until the surface is golden brown and the batter is cooked through.
7. Allow to cool for a moment, then cut into desired sizes and fill with your favorite fillings.
8. Wrap tightly and enjoy!
