Spelt Blinis with Caviar and Sour Cream

Delicious small pancakes made with spelt and buckwheat flour, served as an exquisite appetizer with caviar, sour cream, and red onion. Preparation Time: Over 60 minutes
Serving Size: 4-6 people
Ingredients:
- 1 dl spelt flour- 1 dl buckwheat flour
- 1 dl milk
- 1 dl water
- 2 eggs
- 1 packet dry yeast
- 1/2 tsp salt
- 1/2 dl butter (for frying)
- 200 g caviar
- 200 g sour cream
- 1 red onion (finely chopped)
Instructions:
1. In a bowl, mix together the spelt and buckwheat flours. Add the dry yeast and salt.2. In a separate bowl, whisk the eggs and then mix in the milk and water. Combine the wet ingredients with the flour mixture.
3. Stir the batter well and let it rest at room temperature for about 30 minutes.
4. Heat a frying pan over medium heat and add the butter.
5. Pour batter onto the pan to form small pancakes and cook until golden brown on both sides.
6. Serve the blinis warm with caviar, sour cream, and chopped red onion.
