Ingredients

- 300 g Arborio rice
- 1 l vegetable broth
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 100 ml white wine
- 50 g Parmesan cheese
- 50 g butter
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish

Instructions

1. Heat the vegetable broth in a pot and keep it warm.
2. Finely chop the onion and garlic. Sauté them in olive oil and butter in a large skillet until softened.
3. Add the rice and cook for a few minutes until translucent.
4. Pour in the white wine and stir until it has almost completely evaporated.
5. Add hot vegetable broth one ladle at a time, stirring constantly. Add the next ladle only when the previous one has been absorbed.
6. Continue this process until the rice is al dente and creamy (about 18-20 minutes).
7. Chop the mushrooms and sauté them separately in butter until nicely browned. Season with salt and pepper.
8. Mix the sautéed mushrooms into the risotto and add grated Parmesan cheese. Stir well.
9. Serve the risotto garnished with fresh parsley.
