A luscious lingonberry jam that combines the flavors of fall with vanilla and lemon, perfect as a topping for freshly baked scones or other pastries. Preparation Time: 45 minutes
Serving Size: About 4 jars
Ingredients:
- 500 g lingonberries
- 300 g sugar
- Juice and zest of 1 lemon
- 1 vanilla bean
Instructions:
1. Rinse the lingonberries and remove any debris.
2. In a pot, combine the lingonberries, sugar, lemon juice, and lemon zest.
3. Split the vanilla bean and scrape the seeds into the pot. Add the whole bean as well.
4. Heat the mixture over medium heat until the sugar dissolves.
5. Allow to simmer on low heat for about 30 minutes, stirring occasionally.
6. Remove the vanilla bean and check the jam's consistency. The jam is ready when it is thick.
7. Pour the hot jam into clean jars and seal tightly.
