Ingredients:

- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 medium carrots, diced
- 2 celery stalks, chopped
- 4 potatoes, diced
- 1 liter vegetable broth
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 can (400 g) diced tomatoes
- 2 cups frozen peas
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add chopped onion and crushed garlic. Sauté until the onions are soft.
2. Add diced carrots, celery, and potatoes. Cook for about 5 minutes until the vegetables begin to soften.
3. Pour the vegetable broth into the pot and add thyme, salt, and black pepper. Bring to a boil.
4. Stir in the diced tomatoes and mix well. Let the soup simmer on low heat for about 15-20 minutes until the vegetables are fully cooked.
5. Finally, add the frozen peas and cook for an additional 5 minutes. Taste and adjust seasoning if needed.
6. Serve hot, garnished with fresh parsley.
