Ingredients:
- 300 g fresh pasta
- 200 g cherry tomatoes
- 150 g mozzarella
- 100 g high-quality olive oil
- 2 garlic cloves
- 1 dl fresh basil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little cooking water.
2. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.
3. Add the cherry tomatoes to the pan and cook until they soften.
4. Toss the cooked pasta into the pan and mix well. Add reserved cooking water as needed to prevent the pasta from drying out.
5. Crumble the mozzarella into the pasta and stir until the cheese slightly melts.
6. Add fresh basil, salt, and pepper. Mix all ingredients well.
7. Serve the portions with Parmesan cheese and enjoy the ambiance of Istria!
