A refreshing rhubarb-lemon summer drink perfect for hot days, combining the tartness of rhubarb with the zest of lemon for a delightful flavor experience. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 500 g rhubarb - 1 liter water
- 200 g sugar
- 2 lemons (juice and zest)
- Fresh mint leaves (optional)
- Ice for serving
Instructions:
1. Wash and chop the rhubarb into small pieces. 2. Boil the rhubarb in water in a pot for about 10-15 minutes until it softens.
3. Strain the rhubarb mixture, saving the liquid and discarding the rhubarb pieces.
4. Add sugar to the hot liquid and stir until the sugar dissolves.
5. Mix in the lemon juice and zest, stirring well.
6. Allow the drink to cool at room temperature, then transfer it to the refrigerator to chill.
7. Serve cold with mint leaves and ice.
