A refreshing and delicious compote that combines rhubarb and apple, served with vanilla ice cream for a perfect summer treat.

Serving Size: 4-6 servings

Ingredients:

- 3 dl chopped rhubarb
- 4 apples (peeled and chopped)
- Juice of half a lemon
- 2 tsp cinnamon
- 1 1/2 dl brown sugar
- 6 dl water
- 2 tbsp potato starch mixed with a splash of water
- Vanilla ice cream (for serving)
- Whipped cream (for serving)
- Strawberries (for garnish)

Instructions:

1. Peel and chop the apples. Squeeze lemon juice over the apple pieces and add cinnamon.
2. Chop the rhubarb into pieces.
3. Place the rhubarb and apples in a pot. Add water and brown sugar.
4. Cook the mixture until the apples are soft. Blend it with a blender.
5. Add the potato starch-water mixture to the compote and bring to a gentle boil.
6. Spoon the compote into serving bowls.
7. Add a scoop of vanilla ice cream, then the compote, and garnish with strawberries.
8. Finally, top with a dollop of whipped cream.
